Slow Sauce is Scotland’s first dedicated miso and shoyu brewery, creating small‑batch, long‑fermented products using Scottish oats and British peas instead of soy. Founded by chef Jono Hope and fermentation scientist Robin Sherriff, they blend traditional Japanese koji techniques with local ingredients to produce gluten‑free, soy‑free, vegan miso and shoyu that are aged slowly for deep flavour and used by chefs across the UK. This hands‑on workshop introduces participants to the world of miso — one of the most versatile, nutrient‑rich fermented foods. Jono Hope from Slow Sauce will guide you through the fundamentals of miso making, fermentation, flavour development, and practical home use.
